  • ½ tsp chilli flakes (optional)

  • 400ml coconut milk (1 tin)

  • 500ml vegetable stock

Method:

  1. Preheat oven to 200°C (180°C fan). Cut the pumpkin into wedges, remove seeds, and roast with a drizzle of olive oil for 30–40 minutes until tender and golden.

  2. In a large pan, gently fry the onion, garlic, ginger, and chilli flakes until fragrant.

  3. Scoop the roasted pumpkin flesh into the pan. Add coconut milk and stock. Simmer for 10 minutes.

  4. Blend until smooth and creamy. Stir in lime juice and season to taste.
